How To Bake a Chicken to Simple Perfection
For a Quick and Delicious Meal
Your Whole Family Will Love

This is a great recipe when you want a simple but tasty sit-down dinner the whole family will love. I especially like it because I can put the chicken and vegetables in the oven and then do other things while it’s baking.

You will need:
a large roasting pan with a lid
one large whole chicken, fresh or thawed
cooking spray or melted butter
sea salt, ground black pepper, onion and garlic powder
3 to 4 baking potatoes, peeled and sliced into 1/4 inch disks
1 to 2 pounds of carrots, peeled and cut in half
1 or 2 large white onions, peeled and quartered
1/2 cup water

Preheat oven to 350 degrees fahrenheit. Spray the bottom of the roasting pan with cooking spray and add the 1/2 cup of water.

Now you’re ready to put it all together. Put the chicken (back side up) in the roasting pan and spray with cooking spray or baste with melted butter. Mix the potatoes, carrots, and onions in a large bowl and spray with cooking spray just to lightly cover or drizzle melted butter over the vegetables. Sprinkle the salt, pepper, onion powder, and garlic powder over the chicken and over the vegetables to taste. Stir the vegetables to coat with seasoning.

Put the lid on the roasting pan and bake the chicken for 30 minutes. Take the roasting pan out of the oven and add the vegetables, pouring them in around the chicken. Bake an additional 40 minutes.

Dinner’s ready! For a really quick dinner, just serve it right out of the roasting pan. Otherwise, remove the chicken to a large serving dish and scoop the vegetables onto the dish around the chicken.

The juice is good too! If you want to thicken the juice to make a thicker gravy, pour the juice into a sauce pan. Mix a tablespoon of arrowroot in a 1/4 cup of cold water to dissolve and then stir it into the juice to thicken the gravy while heating it over medium high heat.

I use arrowroot instead of corn starch and sea salt instead of regular table salt because they have an alkalizing effect on the body. If your family prefers mashed potatoes, just make them separate instead of adding them to the roasting pan. We also add a can or two of stewed tomatoes sometimes to vary the recipe. Experiment and try adding different vegetables your family likes. Just make sure you time the cooking so they’re all done at the same time. You don’t want some vegetables undone while others are mushy.

I hope you enjoy this recipe as much as my family does. It’s such a quick and easy meal to fix (especially since you don’t have to stay in the kitchen the whole time).
